Hi,
as the wikipage of BTRFS states, there is experimental support for it. But I don't remember all of the installation so I don't know if there is an option. About the Bootloader, on my System is grub installed but also the packages of syslinux. So it shouldn't be that hard to replace it. If you don't want to install grub in the first place you could install without bootloader and install it later from Live-Disk.

cheers

Please don't repeatedly bump your topic in a short amount of time, since it won't get you any faster response and it might actually turn against you, since it is considered bad netiquette.

You can read in the release announcement this line:

Always up-to-date Linux Kernel 3.2 (and experimental "Fusion" Kernels available in repositories)

This shows that Sabayon supports experimental fusion kernel, which, as you can read from Phoronix, is:

Fusion Kernel is a new effort led by the few Sabayon developers and it's aim is to be similar to the Zen Linux kernel sources. The Fusion kernel is supposed to be a "Sabayon-flavoured Linux kernel sources on steroids." Among its features are integration of the Brain Fuck Scheduler (BFS), the BFQ I/O scheduler, Reiser4 file-system support, experimental Btrfs patches, experimental DRM patches, and new wireless-next drivers.
