Isn't the idea of persistence to provide a partition which will act in the same manner as a home partition does on a full system install which can be copied, saved, moved or migrated. In the event you scrap your install in favour of a fresh install you can setup a new home partition & migrate your old home partition contents to it, so with a usb pen drive you would work in live enviroment on any pc but be able to access read from & write to your personal data taking it with you everywhere.

Then try using LiLi USB Creator for Windows (http://www.linuxliveusb.com/) as I mentioned previously, as it can create USB pen drive Linux installations with persistence.

The problem with making a pure Sabayon USB is the human resources element. We are still a small distro in terms of the braintrust and if we have a pure USB version this will probably water down said "braintrust". If someone is so inclined and has the time, they could probably build a pure USB Sabayon, but to get it to the high standards everyone expects from Sabayon and to have Lxnay to approve it is a lot of work and coodination.

As a side note we used to have a professional/business edition but the maintainer could not maintain it any longer.

I'm not sure I understand your question. By downloading the ISO of SL under either Windows or another version of Linux it is possible to use LiLi USB Creator or UNetbootin to create a USB version of Sabayon Linux on a pen drive which works out-of-the-box. So there is already a 'USB version of Sabayon Linux'.
