server installation only text mode

I'd like to install sabayon on my home server - it won't have any screen connected to it.

I wonder how to disable the graphical boot screen (displayed in grub, kernel init) and graphical loggon prompt?
How to make the installation software ask me for each package installed (I've used graphical installer on my desktop station and it installed a lot of garbage), does the text mode installation give that option?

Use the Core version. It doesn't come with any desktop so only thing left should be uninstall sabayon-artwork-corecd and splashutils (not sure if this is the one or just some additional utilities) or remove the splash=silent,theme:sabayon from the grub entry.
