Sabayon used to have both Gnome and KDE, now they are in separate DVDs in order
to reduce the download time and let the installation be more "clean".
Installing both of them can be done simply installing, for example, the Gnome version,
booting in the system and running from a console, as root:

equo install entropy equo sulfur
equo install --ask kde-meta
The same can be done after the installation of the KDE version.
Sabayon uses binary packages for the installation, but gives you the possibility of using
source packages with portage.
You can choose to use entropy (equo as TUI and sulfur as GUI) or portage (emerge as TUI and various GUIs).
Mixing them is possible but requires some experience.
