You installed the kernel image but not the corresponding kernel source code. To install the latter (if you need it, which is not normally the case in a binary distribution such as Sabayon Linux):

"eselect kernel" != "eselect bzimage" .
The function manage a symbolic link that points to "something"

- kernel list : list of available kernel source dirs /usr/src/<kernel-version>
Used to compile your own kernel version

- bzimage : list of available Kernel/Initramfs in /boot
if you start Sabayon from other grub (I.e. : Ubuntu grub) , you can point to a generic "kernel/initramfs file name" just like bzImage/Initrd if Grub doesn't discoverry the real kernel you want to boot.
