What is the difference between update and upgrade in sabayon??
I have just switched from Fedora/Korora... update and upgrade serve different functions there..

The quick response is update means to download the latest list of available packages from the remote repository.
Upgrade takes all of your currently installed packages and installs newer ones that your system knows about.

So you'll always want to update and then upgrade.
