I've got the same printer and it works flawlessly.

try to emerge foo2zjs, then add the printer in CUPS using the driver:

HP LaserJet 1020 Foomatic/foo2zjs (recommended)

To access cups, type http://localhost:631 in your web browser.

If all else fails go here http://hplip.sourceforge.net/index.html and download the top item hplip 2.8.2 follow the install instructions. Then go to menu-apps-utiliies-hp device manager -let hp find and install your printer then everything will work. The hp device mgr that comes with Sabayon does not work right so I do this with each install. This way I get all the functions built into my HP printer working. I feel that as long as HP wants to work with Linux I will go with what they offer and avoid the bloody knuckles all together. :D
