Another page I use that has similar information, but laid out in a different way is:

I like the way the page you reference has links out to more detail, but I've found this page really useful for figuring out which packages use a given USE flag.

Never mind. I discovered it was the "ivtv" USE flag that was pulling in the old linux-headers, so I put "/media-player/mplayer -ivtv" into package.use, and it works now.
