It's just wild guess, but try running it with '--no-desktop' option, so it won't try to manage your desktop icons.

Removing DE can't remove your files. At most, it can delete it's own configuration.

Use same user and password as before, users and passwords should be unaffected.

First thing that comes to my mind would be to re-create user in one system, so uids will match (you can specify uid via '-u' parameter to adduser).

Other option is to add 'uid=anne' to fstab, but as far as I know, this would change owner of _all_ files on the filesystem.

Any flavor of Sabayon should work. I don't know what has caused the problem in Ubuntu installation, but i would not recommend using Gnome3 (because of previous problems in Ubuntu and i personally dont like Gnome3 :D ).
