Which of these would I use for Sabayon to install with:
http://desktop.google.com/en/linux/download.html
The .rpm or the .deb version?

Normally neither, as SL uses the Gentoo Portage package manager and not the Red Hat Package Manager (RPM) or Debian Package Manager (dpkg for .deb files).

It appears that Google Desktop is not in Portage yet, although a little Googling quickly reveals a possible work-around I've not tried myself:
