I can find little info on hardware compatibility with sabayon.
In particular I have an ATI Radeon X1300 graphics card in a Dell Dimension E520 - am I likely to run into problems setting up & configuring beryl/compiz?

ATI cards don't work as well. But I've got it running fine on a 9600 series, so an x1300 can definitely handle it. The general process for ATI cards is:
1. In Acceleration Manager, choose XGL.
2. Enable "Composite" in /etc/X11/xorg.conf.
3. Restart X.
4. Use this line to start it (you'll want to create a shortcut): LD_LIBRARY_PATH=/usr/lib/opengl/xorg-x11/lib compiz --sm-disable --replace ccp
5. That should do it. If you have no window decorations, run emerald as well.
