I couldn't find anything besides entropy.log, but the output after you run
equo upgrade --ask (or
equo install [package] --ask), right up to where it asks if you'd like to execute the queue, is close to what I'm looking for. So before answering "yes" to "Would you like to execute the queue," I copied what was in the terminal up to that point and pasted it into a text file. Then saved it as ~/sabayon-packages-history/updates-2012-7-8.
I guess this is a good work-around, as long as there are no problems once the queue is executed. I did it for the big KDE update this weekend. The file has 665 lines of text, but it looks okay. For example, here's what it looks like at the top:
