What version of Sabayon runs beryl after initial install of OS?

You do know that Beryl was discontinued mid 2007 and replaced by Compiz-Fusion, right? If you really do mean Beryl, as opposed to Compiz-Fusion, then the last full version of SL with Beryl was 3.3 if I recall correctly. I think a couple of the so-called loop releases of SL 3.4 came with Beryl too, before being replaced by Compiz-Fusion in later releases of 3.4.

But if you are really jut interested in the 3D desktop cube, the wobbly windows and all that eye candy goodness, then Compiz-Fusion comes with the latest version of SL, which is 4.2. Just go to the SL Home Page and click on Enjoy Sabayon to download SL 4.2. There are two choices: SL 4.2 with the GNOME desktop environment, or SL 4.2 with the KDE desktop environment.

For use specificall Beryl, you may use the 3.4F version...
It have beryl and some other antique packages as Metisse.
but if you need Beryl, and notCompiz fusion, you can not update this system, because GTK, Python, QT OpenRC and many other critical packages,as well as Portage SLOTS etc... are different...
when updated , a high chance that Beryl no more works...
I enjoy Beryl. Sometimes i use Beryl, from the Live DVD of the Sabayon 3.4F, without installation....

Actually 3.4F had Compiz-Fusion, not Beryl. Check the package list in the Press Release:
