Some Questions About Portage

I just downloaded 3.1 Mini, and I am interested in installing it. Before doing so, I have a few questions. My experience with Linux has been limited to Debian and Kanotix, so I am not sure how portage works. I have seen some information on your wiki about emerge -u world to upgrade the system. However, I have also seen an emerge with "deep", what does this mean? What is the difference between the two? Also, why does Gentoo not want you to do a sync more than one a day? Thanks so much for your help.
