From the build log you posted:

Please install the development packages of Evolution and/or
set the PKG_CONFIG_PATH variable so that it points towards
the .pc files of libedataserver, libecal and libebook (the
latter two are optional).

You can check that these packages are available by running
pkg-config --list-all.

Have you run pkg-config --list-all? On the (E17) installation I'm typing this, I get:

evolution-data-server-1.2      evolution-data-server - The evolution data server for the calendar and addressbook
Failed to open '/usr/lib/pkgconfig/cblas.pc': No such file or directory
Failed to open '/usr/lib/pkgconfig/libgcj-4.3.pc': No such file or directory
libecal-1.2                    libecal - Client library for evolution calendars
libedata-book-1.2              libedatabook - Backend library for evolution address books
libedata-cal-1.2               libedata-cal - Backend library for evolution calendars
libebook-1.2                   libebook - Client library for evolution address books

Not sure, but you could try re-merging evolution-data-server and then doing a revdep-rebuild.

reinstalled evolution-data-server, have run sanity checks, which resulted only in reinstalling avidemux

tried to emerge syncevolution again, but with no succes

maybe a relevant remark is that I use Entropy primary

Now just to manage to get it work with my phone and get rid of "There is a problem with the local database." :|
