xorg-server uses xf86-video-nv usually and can result in smaller installs. Ideal for minimal installs.
xorg-x11 uses either xf86-video-nv or nvidia nut uses more space and depends on more = larger install.
startx = white terminals = /etc/conf.d/xdm needs to point to kdm or gdm to start xfce lxde gnome kde.
You now know the xorg config works with the nvidia driver so just need to initialize a desktop manager startDM.sh or similar.
You can cheat by copying this xdm file from the livedvd to make sure it works if you have the livedvd gnome SL dvd. same with a few other files if not sure about the config's .
You might need to edit make.conf /var/lib/entropy/...../make.conf to use USE=" -* minimal gnome alsa cdr gdm" and edit most of the use flags but every time you equo update this will be replaced with the default stock build from the repository.
-* = ignore all only use what is specified instead of -kde - dvd - qt3.
You might want to look at some options in the SL wiki top right of this page or gentoo gnome how-to, use flags and related stuff. ( ps> change the .com failed webpage to.info and it should load for the guides)
It still uses most of the original gentoo config methods here in SL.
You can also try to install umpc version and then add gnome and remove what you do not need = 5gb install before adding extra's until you are more familiar with SL / Gentoo / Funtoo. This should be the easiest to start with.
Using base install, core install you would need to know the gentoo handbook old school install methods and is good to check all options that is specified there like setting timezone but can cheat and use SL kernels.
